Wow, I did it! I blogged for 7 days straight! I've loved doing this daily diary. I'm not sure I'll be able to keep it up long-term, but I'd like to do as much as I can. I think it helps to keep me stay accountable, and I think it will be helpful to look back and see what things help or hinder my progress.
As predicted, the dogs had me up early this morning, so I'm happy that I went to bed early. Luna woke me up at 3:30! I could hear her walking around and playing with toys. I fell back asleep and a bit later, all of the dogs were wanting to get up. So I was up at 5:00 this morning.
I fed the dogs and drank a cup of coffee while watching the latest episode of Loki. Then I did some food prep for the week. I prepped some overnight oats, made a batch of quinoa in the Instant Pot, and baked some tofu, which I seasoned with Bragg's liquid aminos, garlic salt, and nutritional yeast.
Overnight oats: oats, vanilla protein powder, peanut butter powder, unsweetened soy milk, chocolate chips, unsweetened coconut flakes, and frozen cherries.
If you've been keeping up with my posts, you know I've been struggling with having cravings for meat. I don't know what that's all about. I talked to my husband about it and of course, he's supporting whatever I do, but I feel like my body is telling me I'm not getting enough protein and plant-based protein isn't providing enough. So I've decided, for now, to try gradually adding some meat into my diet to see how I feel. This morning I made an egg sandwich with two slices of 12-grain bread, two fried eggs, avocado, and two slices of turkey bacon.
We watched the New York City Marathon and then headed to my oldest daughter's house for lunch. Both of our daughters were there and it was nice to have some family time and spend some time with our granddaughter! She is growing so fast. She is crawling everywhere, pulling herself up on things, and walking with assistance. I got to have some cuddles with her, too, which makes my heart burst!
Lunch was lasagna, caesar salad, and garlic bread.
For dinner I made David and me some ahi tuna with roasted potatoes and veggies. I had a glass of wine while I made dinner. After cleaning up, I tried to read, but I was falling asleep after only a few pages. I ended up going to bed around 8:30. I think it was the excitement of the day, plus the time change.
